Hi All

Just seeking some help on best way to sharpen your knives. What products are good ? Have seen quite a few electric ones where you put the knives through and they hone blade however am worried at how they affect the knife long term (ie grinding away too much).

Used to get them done professionally however with the amount I have starts to become expensive.

I nearly got a Lansky system a while back and should of but the dollar dived and wasn't worth it, as soon as the dollar hits 80 cents I will be ordering one from the USA, best sharpening system on the market, I'm going the diamond stone one .

Until then I am using an Arkansaw whetting stone, had it for 20 years now and it's still like new, and has sharpened all my hunting and fishing knives and for the last 3 years all my daughters cheffing knives, probably 8 knives a week min.

Got myself a three hone standard Lanksy sharpening system from Bluewater a while back and its brilliant.  Doesn't strip the knife of metal but just gives it a really precise edge.

What are they worth? Can they do the different types of edges?

Hi Laurie, the standard kit costs about $85 and it can do four different angles 17, 20, 25 and 30 degrees.

The apprentice at work just got the deluxe diamond Lansky set for $225.00 it works a treat but I don't think it is as good as getting them done professionally.

MBL charges $6 to sharpen a knife so you could get a lot done for that sort of money. They also sell knives & steels so you can get a good steel for touch ups.

The Deluxe Diamond Lansky from the USA is about $120 US take in the exchange rate and it's nearly there allready, another 10cents or so on the dollar will make them cheap. ( standard stone Lansky is around $70 , there is a guy in Tassie selling them cheap on Ebay, tassie knives or something.)

I'm happy using my Arkansaw stone, but my Daughter can't sharpen a knife for $hit so I will get her the Lansky, she finishes her apprenticeship in Dec so it will make a usefull graduation pressy.

I allways keep my knives razor sharp, shave the hair off your arm sharp.

The best sharpening system to keep a hair shaving sharp edge is the Spyderco Sharpmaker. It is a small system that you can take everywhere you go, takes a couple of seconds to set up, puts a razor sharp edge in a couple of minutes and most importently, does not damage your knives. It is also simple to use, anyone can sharpen a knife to shaving sharp, first time, without years of practice. 

You can pick these up off E bay for about $100 and they will last a lifetime.

My sport is Fishing, my hobby is Knife collecting. My opinion ,the Sharpmaker is the simplest and best knife sharpening system that I have found. If there was a better system, and it cost $2000, I would have and use one. Every Lansky and Edge Pro die hard that I have met, have all purchased a Sharpmaker and mothballed their old sharpening system after trying one.

Before you invest in some hard earned cash on a knife sharpener, have a look at these. 

Hal, you should stock these, they are the ducks nuts.

Had a good read about them on the internet and took your advice.

Bought one off Ebay today $106 delivered from guy in Tassie. Look forward to getting a hold of it and getting the knives out so to speak.

You won't be dissapointed with your purchase.
Their are a couple of handy tricks to get the most out of the Sharpmaker.
If you have any probs getting a shaving sharp edge, let me know and I will point you in the right direction.

Mick & John, you will never have a blunt knife in the house after owning a Sharpmaker.

The Ebay trader in Tassie is also good to go, I have bought 5 of these from him over the last couple of years, all given away to friends and family as presents.

You will probably find the process of sharpening your knives very therapeutic - its quite addictive.

The next step in sharpening is going from the Sharpmaker to a Leather strop loaded with chromium oxide, to take an edge from shaving sharp, to hair whittling sharp. Its a touch overkill for whipping the sides of a Pinkie, but can be easily done with the right setup.

Hopefully after reading the instruction book and watching the DVD I will have the hang of it .Thanks for the offer of help, will let you know if I need it...... 

No doubt my wife will be lining up all of her kitchen knives , so it may be one of theose jobs to do listening to the footy on the radio...

Just some feedback,
BRILLIANT! How too DVD plus written instructions.
I managed to sharpen my wifes Mundial  knife set better than when they were new.
My ice  hardened German filleting knife was almost impossable to get back to sharp with other methods, It can shave the hair of my arm now.
Swibo filleting blade was pretty sharp when I bought it but no problem keeping it that way.
I have several sharpeners but this is by far the best I have used.

Although pretty handy with a conventional stone I bought a sharpmaker on the strength of this thread.

I can honestly say that it makes the whole sharpening process easier and quicker. A great tool.
